The Texas Style Shabby Chic Winter Buffet is truly a fun spirited, special occasion, yet casual buffet idea. It's a great way to celebrate the holidays with friends and family! This design is practically fully self service, with the exception of a few passed bites during the Meet & Greet Hour! It's based on the idea of heavy hors d'oeuvres, and will not follow the standard! ;)

This menu is suitable for a lunch or supper buffet, and there's something for everyone!

Let's start with the appetizers! Your bar side appetizers take a fun twist with this buffet, in a delicious Tex Mex way! The Quesadilla Tray!

Select from Simply Cheese, Black Bean & Cheese (pictured) or Spinach & Cheese. All come with sour cream and salsa...dee-lish!

We'll do a couple of passed appetizers while you and your guests are mingling...here are a few to select from...

Jalapeno Poppers

Taco Bites

Tex Mex Shrimp & Avocado Bites

Spicy Shrimp & Sausage Skewers

Summer Sausage Skewers

Sausage Stuffed Mushrooms

Spinach Artichoke Bites in Phyllo

Unless you're planning on an extra extended Meet & Greet, two passed appetizers , along with your Bar Side Appetizer, will be quite sufficient. We've got a really nice open buffet, with lots of variety, must save appetites!!

Starting with the Tex Mex Chopped Salad...

For the fresh offering on the buffet, this salad of crisp lettuces, tomato, black olives, red onion and pepper rings fits the bill. Ranch and a simple vinaigrette, with croutons or tortilla whiskers, on the side.

Ok, that's it for the good for you fresh stuff...on to the fun! This is a special Christmas buffet, and, as such, it will not follow our normal balanced diet theorem. No, it will not.

Next on the buffet will be our meat offerings...I'm going with pork tenderloin and beef brisket, both roasted. We'll have both a gravy and a bbq sauce on the side, along with all of your favorite sandwich go withs...horseradish sauce, whole grain mustard, Dijon mayo, a variety of pickled peppers, sliced red onion, pickles...of course, Ms. Debra's Famous Kinsloe House Rolls, and, because we're in Texas, Mrs. Baird's Soft White Sliced Bread!

It's our Texas Style Oven Roasted Beef Brisket on top, with Rubbed Pork Tenderloin below. The set up is designed for creating finger sandwiches, with our KH dinner rolls, or simple bread, if you want.

What goes with sandwiches???

Well, Potato Chips, of course!!! Home made, Parmesan Black Pepper Herb Potato Chips!

How about some Fried Mushrooms for interest?

They are divine !!! And fun! Served with Ranch on the side, for dipping.

And, speaking of fun...we've got to have Deviled Eggs! Lowly and common, they're always a huge hit with our guys!!! And, we girls like them, too!

There's a Dip around here, somewhere!



See this!! Yes...up there! That's snooty cousin! We TRIED to get her to move with the other sweets...she refused! So, there she sits...right in the middle of savory! Pistachio Cranberry White Bark. We all have that one relative who just HAS to be the center of attention!

Ok, now we're gonna take a little walk around here...

just to the other side of the buffet...well, look at that!

That's where the Deviled Eggs ran off to!! These are the classic lightly mustard flavored ones...we also have some with bacon, or maybe try salmon! They're delightful, no matter which you choose!

It's just so much a perfect part of the scenery!

What says Texas, and Winter, so perfectly?

On a winter heavy hors d'eouvres buffet, I'd say it's Chili!

With all the accoutrements! This screams 'Texas'!

A nice pot of Heartwarming Chili...we'll leave the extra heat on the side! Cornbread Bites, Fritos, Oyster Crackers, shredded cheddar, sour cream, chopped onion, jalapenos and other heat sources, like pepper flakes! And Hot Sauce!

Our small tasting bowls are the perfect portion!

Enjoy small tastes of many things!

And, when it comes to the end...enjoy the sweets! I've got a selection of Holiday Sweets & Treats for the Home Run of this dinner! All pick-up desserts, so they fit well with the theme!
