Bandanas, Boots & BBQ ~The Reunion, Texas Style...the BBQ Buffet!

The Texas Family Reunion or a Class Reunion always bring to mind the Ultimate BBQ Buffet! These food traditions are the roots of the souls of the families in the area! And, delicious roots, they are!!!
It's Reunion Season ....July through October seem to be the most popular months for the Reunion Dinners. The BBQ Buffet will always, in Texas, anyway, include Beef Brisket, slow cooked and wonderfully seasoned, with BBQ Sauce on the side, and then we opt for a variety of side dishes!!!
For this Reunion Season, on the BBQ Buffet, we're rolling with the BBQ Trio, of Brisket of Beef, Oven BBQ Chicken and Smoked Sausages...Let's begin! Get the napkins out! I'm ready!!! This particular buffet will run $20 per person, plus tax, and features full size portions across the buffet.
For a $15 dinner, served, you'll have the Garden Chopped Salad as an appetizer; Select the Brisket or Chicken, and we'll add a taste of Smoked Sausage alongside. Then, take your choice of the Mac & Cheese and one other side from those listed, below. Select one of the Desserts. And, of course, Ms. Debra's Famous Kinsloe House Rolls come with!

This is our House Brisket...we season it with a grand spread of whole grain mustard and a generous coating of our favorite seasoning blend! And, it's so delicious!
It's slowly oven cooked, and gently carved...
BBQ Sauces will be served on the side, one a sweet hickory, and a second, more spicy model!
Thinly sliced red onion and kosher dill pickles on the side, as well.

Our Chicken begins with an overnight brine, to lock in flavor and tenderness! Then, with a generous shake of sweet & spicy bbq seasoning, it's slow roasted...so flavorful and delicious! We serve this with extra sauce on the side, for those who like the 'wet' style of bbq! Alternate selection is the pre-sauced BBQ Chicken, pictured below.

Both are delicious...we'll let you decide which style you prefer!


The third meat on the Reunion Buffet is Country Smoked Sausage, available sauced, or not...we'll have the sauces on the table to sauce as you please.
For your Sides Selections, we'll set out our Home Style Mac & Cheese, you pick which type you prefer...

Our Baked Mac & Cheese, pictured above, features four cheeses and a crunchy crumb topping.
Our Stovetop Style Mac & Cheese, below, has its own special blend of flavors, in a four cheese creamy goodness.

Next, on our list of Sides will be our Beans...this really goes along the lines of your own particular favorites... we offer you three choices, here.

Southern Style BBQ Baked Beans starts with the standard baked beans and dresses it up with sautéed fresh onions and bell peppers, BBQ sauce, mustard and brown sugar and bits of bacon...delicious!

Ranchero Beans are done with pintos, in a hearty sauce, with flavors of onion, bell peppers, garlic, chili and cumin, with ham and sausage bits throughout. These have a little kick, from the jalapeno, but not overly hot.

Pintos and Peppers is the spiciest of the three options, but I can, easily, cut back on the heat if need be! Ours features slow cooked pinto beans with onion, bell peppers, jalapenos and bits of smoked ham, with Sazon for authentic south of the border flavor.
Next on the menu are our cold salads, to round out the entrée. Select whichever one you like best!

Broccoli Salad is one delicious option for the Reunion Buffet. This version has fresh broccoli, bits of bacon, dried cranberries, cheddar cheese and sunflower seeds in a creamy, sweet and tangy dressing.

Creamy Pea Salad is a long time family favorite for many of our friends! Sweet peas, red onion, bacon and cheddar cheese are blended with a creamy mayonnaise dressing.

Creamy Coleslaw is a welcome addition to any BBQ Buffet. Ours is a traditional recipe, with green and purple cabbage, red onion slivers, and carrots in a creamy mayonnaise dressing dolled up with celery seed and seasoning salt.

The Garden Chopped Salad is not only tasty, it's a delightful blend of colors, flavors and textures! Ours has romaine and iceberg lettuces, cucumber, tomato, red onion, super thin radish slices, banana pepper rings and black olive slices. Croutons, Italian dressing and Ranch are served on the side.
We'll wrap up the buffet with a duo of desserts...No need to pick just one! We absolutely have to present the local favorite of Banana Pudding! And we would be remiss in our duties as Texas caterers if we didn't set out the Texas Chocolate Sheet Cake! They're pictured below...you have our permission to drool!
